We prepare all the necessary ingredients. The butter must be removed from the refrigerator in advance, an hour, or better yet, two hours, so that it melts well and becomes soft. It is better to get the eggs in advance, too, so that they are not cold. Or heat them under pressure of hot water.

At the beginning of cooking, melt the chocolate in the microwave or in a water bath. If you melt it in the microwave, then it’s better to do it this way: keep it in the microwave at maximum power for 10-15 seconds, take it out, and stir. Even if, when taking it out of the microwave, it seems to us that the chocolate has not melted and there is no need to stir it, we stir it anyway. The melting process of chocolate continues even after the heat has stopped.

In a separate container, beat room temperature butter with sugar with a mixer for 3 minutes.

Add eggs one at a time and mix with a mixer. Also add salt and mix too.

Add melted chocolate and mix thoroughly until smooth.

Sift flour, cocoa and baking powder into a separate bowl and mix. It is convenient to do this with a whisk.

Add the chocolate-butter mixture to the dry ingredients and mix thoroughly until smooth. It is better to work with a large spoon, as the dough turns out to be quite liquid. If you want to add some kind of additive to the cookies (raisins, nuts, dried cranberries, etc.), then you need to add them at this stage. Place the bowl of dough in the refrigerator for half an hour.

After refrigeration, the dough will harden and will be easy to work with. Using a spoon (I use a special ice cream scoop 4.5 cm in diameter) place the dough balls onto a baking sheet lined with baking paper or a silicone mat. If you have a regular spoon, then it’s convenient to scoop with one and move the other onto a baking sheet, or you can scoop with a spoon, and then quickly roll into balls with your hands and place on a baking sheet (if you like precision, then the weight of one cookie is approximately 35-37 g). You need to place them at some distance from each other, since during baking the cookies “melt”, spread and increase in size. All the dough will not fit on one baking sheet at once; we put the rest in the refrigerator again.

Bake in an oven preheated to 175°C for 15 minutes. If the cookie size is smaller than mine, the baking time will be reduced. After baking, carefully transfer the cookies to a wire rack and let cool. It is soft at first, but hardens very quickly and becomes crispy, moderately sweet, and a little moist inside. We also bake the rest of the dough.
